Mainly from family owned Grand Cru & Premier Cru vineyards (Ambonnay, Bouzy & Louvois). 6 months in old Burgundy oak barrels. Minimum 7 years on lees. The winemaker Christophe Rapeneau has been awarded as IWC 2017 Sparkling Winemaker of the Year.
Tasting Notes:
Light fruity aromas (citrus fruit, wild peach and pear, tropical fruit). It is evolving towards tertiary aromas with delicious hints of honey. Warm bread and hazelnuts.
Good to pair with Cavier, Oyster, Shrimp dumpling.
